This recipe was influenced by Lady Racheal.
Ingredients:
Jumbo shrimp, peeled and deveined
Hickory bacon
Block of pepper jack cheese
Jalapeno
Your favorite barbecue sauce (Tipsy Tavern uses Sweet Baby Ray’s Hickory & Brown Sugar)
Your favorite chipotle aioli
Preheat the oven to 425°F. Place a greased cooling rack on top of a cookie sheet. Butterfly the
shrimp (slice down the middle). Thinly slice the jalapeno and cheese. Add a slice of jalapeno and
cheese to the middle of the shrimp and fully wrap in bacon. Thread shrimp onto metal skewers to
make it easier to flip. Place the full skewers on top of the rack. Bake for 20 minutes, flipping
shrimp halfway through. Brush one side of the shrimp with barbecue sauce and cook for five
more minutes, then flip and repeat. Serve the shrimp with a side of chipotle aioli for dipping.
