I’m not quite ready to give up summer when September rolls around, but I am ready for apple cider donuts. Around here, they’re one of the first signs that fall is on its way. This baked version has all that cinnamon-sugar, apple-cider goodness without the mess of frying. And really, anything rolled in cinnamon sugar has a pretty good head start with me. (this recipe does not appear in my book)
Baked Apple Cider Donut Muffins
Makes 12 muffins
Ingredients
- 1½ cups apple cider
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1½ teaspoons cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon salt
- ½ cup unsalted butter, melted and slightly cooled
- ½ cup brown sugar
- ¼ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
For the cinnamon-sugar coating
- 4 tablespoons melted butter
- ½ cup granulated sugar
- 1½ teaspoons cinnamon
Directions
- Pour the apple cider into a small saucepan and simmer over medium heat until it has reduced to about ½ cup. This concentrates the cider flavor and makes a big difference. Set aside to cool.
- Preheat the oven to 350°F. Grease a 12-cup muffin pan or line it with paper liners.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk the melted butter with both sugars. Add the eggs and vanilla, then stir in the cooled cider reduction.
- Add the dry ingredients to the wet ingredients and stir just until combined. Don’t overmix.
- Divide the batter evenly among the muffin cups and bake for 16–20 minutes,or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for about 5 minutes.
- While they’re still warm, lightly brush the tops—and sides, if you’d like—with melted butter. Mix the sugar and cinnamon together and generously roll or sprinkle the muffins with the cinnamon sugar.
Best eaten slightly warm with coffee, tea, or a mug of hot cider.
Cooking Club Tip: Reducing the cider is worth the extra few minutes. If you use it straight from the jug, much of that wonderful apple flavor disappears during baking.
Tango says: “Apparently, rolling something in cinnamon sugar makes it a donut. I’m willing to test this theory repeatedly.”
